In last week’s post, I shared pictures of what we did during our recent camping trip. Today’s post will focus on what we ate. Skip this post if you are hungry or cannot stand photos of food.

Still with me? Wonderful! Let’s start with Friday night’s dinner. Our friends were responsible for this meal. I love it when they cook because chances are the food will be Korean. I. LOVE. KOREAN. FOOD. If you’ve ever had Korean BBQ, you will understand me. If you haven’t, I highly suggest you try it.

Friday Night’s Menu

1) Kalbi (beef) on skewers

3) Spicy and tangy shrimp (Marinated with Sriracha hot sauce and ketchup). bbqshrimp

Saturday Morning’s Menu

1) Fried doughnuts – Our friends found a recipe online on “fake making” doughnuts. Here’s the Cliff Notes version:

Ingredients

  • Can of buttermilk biscuits (Tip: You can cut doughnut hole by using a screw cap from a bottle)
  • Oil for frying
  • Sugar or confectionery sugar

The doughnuts brown very quickly so be sure to keep a close watch. Once doughnuts are cooked (fry 1-2 minutes on each side), you can either sprinkle the sugar/confectionery sugar over doughnuts or place doughnuts in paper bag filled with sugar (just shake).

These came out really delicious! They remind me of zeppoles (one of my favorite things). I love how simple it is to make these.

2) Sausage, egg, & potato burrito

This was something Chris, my husband, made a day before we left for camping. The filling consisted of eggs, potatoes, sausages, onions, peppers, and cilantro sauteed in a pan. A slice of white American cheese was laid on each corn tortilla wrap. The burritos were then wrapped in foil and placed in our freezer before transferring to cooler the next day.

On Saturday, Chris cooked the burritos (still wrapped in foil) on the BBQ. Definitely a yummy and easy breakfast to eat. No plates or cuttery needed.

1) Teriyaki chicken wings and Pernil (Spanish pork shoulder)

Chris marinated the chicken wings and pernil before our trip. Food tastes better when marinated the night before. Not to mention there’s no need to bring extra ingredients on trip.

2) Pickled red onions (Chris always makes this to accompany pernil.)

Once salted for at least 30 minutes, the onions turn into a bright pink color. The salt also draws out all the liquids from the onion. Add oil to dilute some of the tang. Cilantro is optional.

3) Fried Clams (Chris added some seafood fry mix and fried the clams in a pan.)

friedclams4) Chris cooked some Spanish yellow rice on a pan. He added cilantro on top.

There you have it, all the pictures of the food we ate during our camping trip. Some people go camping to go hiking but for us, it sure appears that we go camping to eat!
