When I envision a Lobster Bake, I think of this big gathering of people, enjoying a smorgasbord of seafood, corn and potatoes. It’s what I call Good Eats, Group Style! But often times, most of us are not hosting large gatherings. Usually it’s just us and our significant other or friend. For such instances, I think a “Lobster Boil” will be most fitting. Chris, my husband, made this meal for the two of us recently and it was as easy as it was delish! I thought I’d share…

WHAT WE USED:

  • 2 Lobsters (1-1/4 lbs to 1-1/2 lbs each)
  • 2 Corn on the cob (We halved each piece)
  • 2 Sweet Potatoes or Yams (We used yams here)
  • 8 Jumbo shrimp
  • 1 Dozen clams
  • 1 Bay leaf

Butter Dip (Optional)

  • 3 Cloves of garlic
  • 2 Sticks of unsalted butter

FIRST

Since the sweet potatoes take longest to cook, you should start with them first. In a large stockpot of boiling water (add 1 bay leaf), cook sweet potatoes for approximately 25 minutes (possibly longer depending on size).

SECOND

After you have scooped the sweet potatoes out of the stockpot, it is now time to cook the seafood. Place lobsters (head first) into water and cook for approximately 15 minutes.

THIRD

After lobsters are cooked, place the clams and shrimp into same pot of boiling water. Once shrimp turns pink and the clams open up, they are done! But you knew that already, of course. 😉

FOURTH (Last Step)

Boil corn in pot for 5 minutes.

The corn and lobsters below are done.

BUTTER DIP (Optional but recommended for seafood) **We didn’t add any salt to the boil since seafood is naturally salty.**

Clarify the butter by melting 2 sticks of unsalted butter under low heat. Allow the butter to melt slowly (approximately 3 minutes). Do not stir the butter during melting process. 

Scoop up any milk solids until the consistency looks like below photo.  If you want to achieve perfection, you can use a cheesecloth to separate the solids. We’re not fancy…we simply used a spoon.

After the butter has been clarified, you can add a few cloves of garlic for extra flavor. Did you know that clarified butter can be refrigerated for up to 4 months?

This Lobster Boil meal only took an hour from start to finish. If you have an outdoor space, this is the perfect meal to serve outside! Also, nothing wrong with throwing today’s newspaper over your table. This is certainly a delicious but messy meal. 🙂
